Tomato Tart

We just love recipes with few ingredients. It keeps cost down and assembly time is minimal.

This tart begins with olive oil, basil chiffonade and yellow squash.

Layer the ingredients with the addition of fresh sliced tomatoes (assorted varieties makes for a more flavorful dish) and fresh shredded parmesan/asiago cheeses.

Continue alternating the yellow squash, basil, oil, tomato and cheese until the pie plate is full. Add sea salt and pepper as desired. Red pepper flakes add a pleasant zing too!

Slow bake on 325 degrees for about an hour and a half. Allow to cool, then serve. You can make this a day in advance and warm prior to serving. A super healthy holiday side dish!
