Thanksgiving Goodness 2014

OLYMPUS DIGITAL CAMERAMy Thanksgiving table was for six with one on the way. Three proteins, a soup and eight sides – Stuffed pork loin with roasted potatoes, two turkey breasts woven with bacon and “bella wellington”. My stuffing was made of cranberries, onion, carrot, celery, mushrooms, sage n’ thyme.

Peanut soup garnished with roasted butternut squash cubes, crushed Virginia peanuts, green onions and a dot of Sriracha kicked off our meal!

OLYMPUS DIGITAL CAMERAThe turkey slow roasted at 325 degrees – 7 lbs about 2.5 hours. Add on the gravy from the drippings and cran-apple sauce.

20141127_132902I simmered a bag of fresh cranberries to use in the stuffing. Without washing the sauce pan, I added four diced Golden Delicious apples, added cinnamon, lemon zest then saute’d and mashed the mixture to a savory tart outcome.

All natural and a better choice than in my Spinach Pie recipe, so swap it out – mainly due to the “hydrogenated oil” on the ingredient listing in the other brand. A good reminder to read ingredient labels! And remember, “everything in moderation”!

20141127_134946Aside from the turkey, crab cakes are a typical protein for us at Thanksgiving so I went for something different – Bella Wellington. This main dish deserves it’s own blog and now that I made it once, a few tweaks are already in order. The pastry is filled with a mixture of garlic, shallots, spinach, mushrooms gruyere cheese, balsamic, egg and more… all stuffed into a large portobello then wrapped in the dough with an outside coating of egg wash. THIS melted in your mouth and left you wanting more!

OLYMPUS DIGITAL CAMERAWe indulged in steamed green beans and roasted tomatoes topped with some garlic onion crunches,

OLYMPUS DIGITAL CAMERA…a cold salad with blanched brussel sprout leaves, almost cooked broccoli, dried cherries plus fresh blueberries, yellow pepper strips and blackberries with optional toasted walnuts and raspberry vinaigrette dressing. And yes, I made the dressing and actually I made everything in this blog (except the store bought pastry).

OLYMPUS DIGITAL CAMERAThe drunken baby carrot, golden beet, cherry and pineapple dish was an experiment that turned out in comparison to a strong rum cake. This added some killer flavor to the meal! Thank you Buffalo Trace ha!20141127_134524As for the white stuff…cauliflower mash makes the perfect white potato replacement, offering low calorie vegetable vs. a high starchy carb. Twice baked sweet potatoes (yep, the white ones) are a family favorite too.

OLYMPUS DIGITAL CAMERAAnd this green bean tarte was SO yummy…eat only one small piece! It could be made numerous ways using all kinds of ingredients, yet in this version: green beans, shallots, garlic, mushrooms, red pepper flakes and gruyere cheese (since I needed some for the other recipe.) Easy, savory, satisfying!
