Slow Cooked Apples

Apple season is here! Like peppers, there are a wide variety to choose from.

Apples are good just like they are and make a good snack, along with some fresh ground peanut butter. They are tasty with eggs, added to a cold salad, shredded into slaw, baked, sautéed and slow cooked. Here is a slow cook recipe to enjoy as a side.

It’s so easy! Just peel four apples and slice. I added two Asian pears to the mix for added flavor and texture. Place them in the crock pot. Add water to cover the bottom of the pot.  Squeeze the juice of half a lemon over top. Add 1 cup of oats, 2 tsp ground cinnamon, 1 tsp ground ginger (fresh minced ginger would be good too!), 1 tsp paprika, 2 tbsp raw honey (Manuka honey is a real treat), 1 cup of walnuts, 1/2 cup water. Drizzle some olive oil on top, then toss to coat. Add a vanilla bean for even more dimension! Cover and cook on high for 2-3 hours.

Remove from crock and place in a loaf dish and serve!
