Progressive Dinner

The concept of taking seven condominimum occupants and breaking out a seven course meal sounds like a lot of calories, right? Actually, we planned so well, the entire experience was satisfying without being over the edge too calorie dense. Since I was the ring leader, everyone else choose their course and in the end…dinner was mine.  No surprise. We were 15 people in total.

This was a super way to get to know everyone while celebrating the holiday season together. We started with a little wine with cheese and almonds then on to fresh vegetables with three spreads and a lovely cranberry spritzer. The salad was super healthy and the soup was a white bean, kale and squash Martha Stewart winner! One of the residents has yet to close on their unit, so they brought wine for our entree (I included that as a course ha!).

Knowing we had meat eaters and vegetarians amongst the group, I made a variety of foods that would be easy to serve up with a limited time frame. Starting with chicken parmesan bites with a home made ravioli, (thank you Bombolini Pasta, our awesome local pasta maker!) a marinated artichoke heart and a kalamata olive.

Adding on eggplant stacks… with fresh mozzarella, marinara and tomato… and yes, I must admit – being short on time I had Bombolini make up the eggplant for me too so all I had to do was assemble. LOVE that deep frying is out of the equation, and this dish is pan sautéed in olive oil.

And a roasted vegetable skewer with lemon and spinach ravioli.

Plus a little caprese skewer with fresh basil. Have I told you how much I miss my garden in the winter months?

The entire plate was colorful, mouth-watering perfectly delicious! A great time was had by all and we do look forward to next time! We agreed once a year needs to turn to twice.

Oh and of course, there was dessert and coffee. The mini cheesecakes were so cute!
