Ingredient of the Week XXII:  Chickpeas

Chickpeas are my FAVORITE food at the moment!  They are considered a legume, filled with protein, fiber and good carbs!  They are also known as “garbanzo beans”.  This food item is a meal all in one.  There are soOOO many different things you can do with chickpeas.

Simply add them to a salad or into a wrap.  Chickpeas are a base for hummus, plain or combined with other ingredients.  Make hummus purple, red, green, gold or something else!

Try this quick “Broccoli Button” recipe for a meaty snack.  The chickpea is the “flour”, as it is in my Cookie Meal recipe here.  The chickpea flour becomes a binder, instead of loading up on more cheese (saturated fat) to hold these ingredients together.  It tastes great!

Place broccoli, reduced fat, shredded mozzarella cheese,  garlic powder and red pepper flakes into a bowl, then toss.  Puree the chickpeas in a food processor and add to mixture.

Beat eggs then add them into the mixture and stir until combined well.

Form mixture into 2″ balls and place on a baking sheet.

Bake in a preheated 375 degree oven for about 20 minutes or until browned as shown below.

Add a hot sauce of choice (Sriracha) on top for added zing!  If you can handle it, get in some hot stuff…it will boost your metabolism!

Chickpeas, like other legumes are a magical food.  Whether you eat them plain, combine them with other ingredients, or disguise them, chickpeas RULE!
