Ingredient of the Week XVI: Spinach

Spinach is a cool season crop that carries lots of vital nutrients – some being Vitamin A, C and K! One cup of cooked spinach is over 5g of protein, is rich in iron and low calorie. It actually provides more vitamins and minerals when cooked due to how the body breaks down nutrients.

Spinach is one of those ingredients incorporated regularly.  From salad mix to all sorts of other delightful recipes!  This “growing” salad is easy to make and can include a variety of options, just be creative!  Use what you have in your fridge!  After washing, drying and chopping spinach, romaine, baby arugula and red cabbage, toss it all together in a large bowl.

In a separate bowl combine the remaining ingredients: tomato, hot pepper rings, blanched green beans, pimento, olives halved, bread/butter minced pickle and cucumber.  More red cabbage adds color.  Include edamame for protein.  Chick peas are a good source of added protein too!

Pan saute’ pear slices in a pat of butter on medium high heat until browned on both sides.

Enjoy an easy, complete meal filled with lots of nutrients.  The array of color makes it pleasing to the eye.  Top with avocado, roasted sunflower seeds, a few dried cherries and low fat feta, gorgonzola or goat cheese (if you must).  This lovely salad will surely fill you up!

Remember to add spinach to eggs!

Add spinach to burritos.

Spinach into soups and stews. In lasagna or stuffed shells and stuffed mushrooms!

Spinach with garlic under scallops, or seafood in general. Also good with chicken and pork too!

Just add it to every salad you make to get in all that green goodness! Salad as is, in a wrap or piled on a sammy.
