Ingredient of the Week XI: Cauliflower

Cauliflower is one of the most versatile vegetables in my household!  From raw, to steamed, pureed into mash, grated and stir fried into rice, made into a bread replacement for garlic sticks, pizza crust, it also can serve as dessert!  This vegetable will fool your friends and your family, for real!

Cauliflower is only 25 calories per cup.  One average sized head is about 4 cups.  For 100 calories we could eat the whole head!

A most basic recipe is to steam the cauliflower for 6 minutes in a steam bag – fill the entire bag and seal it – super quick for those people on-the-go (BPA free, microwave safe and recycle No7, or use the conventional stovetop method).  Puree with light sour cream, garlic powder, sea salt and pepper, chives.  That’s it!  Fold in some low fat Feta cheese if you like and twice bake on 350 degrees until warmed.  THIS is a perfect white potato replacement with tons less calories.  Sometimes I substitute reduced fat cream cheese in place of the light sour cream and other times I add in yellow squash and olive oil.  Play around with it!  Other white vegetables are good too, like kohlrobe, turnip or parsnip, pending what you want your final taste to be.

Orange cauliflower is actually sweeter than the white and adds excellent flavor to soups and pies!  Purple cauliflower holds the most nutrients and releases it’s flavor quickly, on the al dente side of things, so good for stir fry meals!
