Hash or Latkes!

The sweet potato was featured a while back and then the “white yam” came into season.  That’s right -a WHITE SWEET POTATO, combined with shredded yellow squash and zucchini, this makes an incredibly delicious latke or even “hash”.

In a large mixing bowl combine all ingredients: shredded white sweet potato, yellow squash and zucchini, chopped onions, scallions, egg, panko bread crumbs, baking powder, garlic powder, sea salt, pepper. Form patties and squeeze the liquid out. Pan sauté in olive oil. Drain on a paper towel or brown bag. You may refrigerate over night and reheat the next day. Serve with light sour cream or unsweetened apple sauce. They are good just like they are too! ENJOY!
