French Bean Salad

A refreshing vegan salad for a meal starter or consider it an entree loaded with protein, fiber and a good amount of calories if you eat a few cups.
Ingredients
  • 1 15.5oz can Cannellini Beans; drained and rinsed
  • 2 cups Green Beans; steamed or blanched; cut into 1-2" pieces
  • 1-2 cups Red Pepper; diced
  • 24 Kalamata Olives; halved
  • 2 tsp Lemon zest
  • 2 tbsp Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 2 tbsp Apple Cider Vinegar
  • Optional: minced Shallot and chopped Marcona Almonds
Instructions
  1. Add first four ingredients to a mixing bowl. In a separate bowl combine remaining ingredients and whisk together. Pour mixture over salad and toss. Chill for one hour and serve!
