Four B Salad

Try this recipe if brussel sprouts and beets have yet to be on your favorite food list.

Four B Salad
Serves: 8
  • 3 cups Brussel Sprouts
  • 2 cups Broccoli, chopped; blanched or steamed
  • 2 cups Beets, diced; boiled or roasted
  • 1 pint fresh Blueberries; washed
  • 1 cup toasted Walnuts; chopped
  • Optional Dressings: Bolthouse Farms Raspberry Merlot Viniagrette or Honey Mustard. Make your own with things like Red Wine Vinegar/Olive Oil, Mustard and Balsamic.
  1. Cut the base of the sprout in a v-shape. Remove individual leaves. Blanche in hot water, then stop the cooking process by submerging into ice cold water. Dry thoroughly with paper towel. Combine all ingredients in a bowl (except nuts), toss and chill. Top with walnuts and serve with dressing of choice.
