Black Bean & Pumpkin Brownie

 

Black Bean & Pumpkin Brownies

This happened by accident and REALLY came out amazing! It's another version of the original "Black Bean Brownie"; by Bert! Around 200 calories each and over 5g of Protein. You will fool the children! And adults are kids too, right?!
Ingredients
  • 1½ cups raw ground Almonds
  • ¾ cup Sugar
  • ⅓ cup 100% Special Dark baking Cocoa
  • 1½ tsp Baking Powder
  • 1½ tsp Sea Salt
  • 15oz can Black beans; drained & rinsed
  • ½ of a 15oz can Pumpkin by Libby
  • 3 Eggs
  • 4 tbsp Olive Oil
  • ½ cup Skim Milk (Soy or Almond works too!)
  • shy of a tbsp Almond Extract
  • ¾ cup chopped Walnuts
  • ¾ cup dark Chocolate Chips
  • ¾ cup dried Cherries
Instructions
  1. Combine the first five dry ingredients in a small bowl and set aside.
  2. Puree beans, pumpkin, eggs, oil, milk and extract in a food processor (or mixer).
  3. Slowly add in dry ingredients until combined. Fold in walnuts, chips and cherries.
  4. Using an 8" x 10" baking dish, coat the bottom/sides with olive oil spray. Bake in a preheated 350 degree oven for about 45 minutes. Use toothpick to pierce center for doneness. The longer the cook time the more "cakey" and the shorter the cook time the more "fudgy".
