Peanut soup with a sweet potato base; Crema heart with crushed VA peanuts and chopped scallions.

Cold vegetables. I heart my vegetables and fruits too: blueberries, strawberries, scallion, cucumber and LOVE beets.

Greens salad lightly dressed with Fig Balsamic, heart arrows and onion crunchies.

Grandma’s garlic bread is always a treat! (secret family recipe).

Roasted vegetable skewer. Yes, more hearts. That IS the theme throughout the meal.

Lots of prep, but smiling all the way from red bells to red onion, orange bells, yellow squash, sweet onion and bella mushrooms.

Here comes a signature…

Jumbo lump crab, eggs, spaghetti squash, panko crumbs,  parmesan cheese, mustard, fresh minced garlic, chopped red bell pepper, scallion and red onion.

Toss the ingredients together and hand patty then chill.

Pan saute’ ahead of party time, then heat on 325 for half an hour.

Serve over an onion puree and top with the roasted vegetable skewer.

So, while in the process of preparing this 4 course meal, I made some other foods using up remaining ingredients like these Sweet potato skins stuffed with fresh chopped vegetables, jalapeño pepper jack and parmesan cheese; easily baked on 400 degrees for 20 minutes.
